Almond Rings

These Christmas cookies have a fine amaretto and almond aroma, they are wonderfully crumbly and go well with punch or mulled wine.

You can also leave out the glaze and sugar sprinkles and simply glue two rings together with jam filling.

What you need:

280g flour

200g butter

100g sugar

100g grated almonds

2-3 drops of bitter almond flavor

1 egg yolk

Juice of half a lemon

1 pinch of cinnamon

1 pinch of salt

For the glaze:

100g icing sugar

9-10 teaspoons amaretto

Sugar sprinkles for decorating

Here’s the recipe:

Knead the ingredients into a dough and let it rest in the refrigerator for an hour.

Roll out the dough about 2-3mm thick and cut out rings.

Bake the rings at 180° C for 7-8 minutes or until they have lightly taken on color at the edge.

Sieve the icing sugar and mix with the amaretto.

Pour the glaze into a plastic bag (cut off the tip!) and apply it to the rings. Decorate with the sugar sprinkles, let harden.
