Ruby Stars

When Christmas is around the corner, it's time for biscuits. Since I do not want to bake the same ones every year, I tried out these ruby stars - they taste delicious and are the eye-catcher on every Christmas cookie cutter.

I found the recipe for these biscuits on küchengötter.de. You'll need two types of cookie cutters - one star shaped and one smaller oval, round or rectangular - depending on what's available.

What you need:

375g flour

3/4 teaspoon baking powder

1/4 teaspoon baking natron

150g soft butter

180g sugar

60g crème fraîche

1 egg

1 pack vanilla sugar

150g currant jelly

2-3 tablespoons icing sugar

Here’s the recipe:

Put the dough ingredients in a bowl, stir and knead into a dough - by hand or with the food processor.

Wrap the dough in plastic wrap and refrigerate for about 2 hours. Then divide into two equal halves.

Roll out the dough thinly on a floured surface and - for the bottom of the biscuits - cut out the stars.

Place the stars on a tray covered with baking paper and bake for 7-8 minutes at 180° Celsius in the oven. Check regularly - the baking time can vary depending on the oven.

For the tops of the biscuits again cut out stars from the remaining half of the dough. Make holes in the middle with the small cookie cutter. Also bake for 7-8 minutes at 180° Celsius.

When they are ready baked and cooled, they can be sprinkled with icing sugar.

Heat the currant jelly for 1-2 minutes and pour into a plastic bag. Cut off a small corner and sprinkle the jelly in the middle and on the tips of the stars (those without a hole).

Place the sugared tops on the lower parts, press lightly. Finished!
